Not gumbo

New meal of April is… Not Gumbo? No recipe. I just had two more big links of andouille sausage left from the first batch of gumbo that I wanted to use up (still one left in the freezer). I wanted to try something with more veggies in it, so I put in about half a head of cauliflower and a couple of yellow squashes, along with onions, carrots and celery (I didn’t have bell pepper on hand, but like I said Not Gumbo). I did start with a roux, but only cooked it to about a dark gold, instead of full brick coloured, and I didn’t add any additional thickeners – since the roux wasn’t cooked as much, it still had plenty of thickening power for the amount of liquid I put in. At some point after the first batch of gumbo I did pick up the unsalted version of the creole seasoning I used last time and I put in a couple of tablespoons of that, along with a spoonful of marmite for some salt and umami.

This one feels like a bit of a cheat, since there’s no recipe involved, but April’s been really busy for me so far, so this may be as close as I get this month.

Gumbo

The latest New Year’s resolution recipe is Gumbo!

I watched Max Miller’s latest video a few days ago where he made gumbo and it made me crave it. I have made gumbo once before, but I’d never heard of filĂ© gumbo (ground sassafras) for thickening, so I went in search of a recipe that used that instead of okra. Also, I can’t eat seafood, so I was specifically searching for one that didn’t include that.

This is the recipe I landed on.

For once I didn’t really make any substitutions (except for using a red bell pepper instead of green). I used andouille sausage which is one of the alternates mentioned in the notes.

I didn’t realise before adding the seasoning mix that it includes salt, so even using the bare minimum amount suggested it came out way too salty, so I made my rice plain to compensate.

Veggie Stew

Taking inspiration from Rae’s butternut squash spaghetti sauce, I made veggie stew this weekend.

What went into it (this was all eyeballed, btw):
