New recipe for September is ANZAC biscuits. I have absolutely no memory of where I got the recipe I have saved, but this one is very close. Only difference is that mine calls for 10 tbsps of butter rather than 150g, but that’s pretty close. 10 tbsps is about 140g and that is what I used.
I have been informed by a friend from Aotearoa that they look right, and they taste good. Mildly sweet, good crunch on the edges, good coconut flavour. Flavour-wise, they remind me of the Hawaianas cookies from Gamesa, but texture-wise they’re completely different. I liked them a lot, and if the theatre folks I plan to share them with turn their noses up at them (I feel like I’ve come across a fair number of people who don’t like coconut – and American cookies aren’t usually this dense), I will happily finish them off myself.
